材料:

黄豆—300克
石膏粉—5克
地瓜粉—40克
水—3000毫升
黄糖—50克

做法:

  1. 将黄豆用清水洗净,洗去沙土灰尘再净泡8小时左右,捞出。
  2. 将黄豆倒入果汁机中,加入1500毫升水,按下开关,打成浆。
  3. 取一锅,铺上纱布袋,倒入作法2的豆浆,袋口收紧,挤出无杂质的豆浆。
  4. 将作法3的纱布袋打开,加入剩余的1500毫升水,用手将豆渣搅拌均匀,收口,再一次挤出豆浆。
  5. 将地瓜粉放入纱布袋中,加入80毫升豆浆,收口,用手将布袋搓揉拌匀,去除杂质;将石膏粉同样放入纱布袋中,加入豆浆30毫升,收口,用手将布袋搓揉拌开,去除杂质备用。
  6. 将作法3的豆浆加热至85度-90度之间,地瓜粉浆调匀倒入作法5的豆浆中搅拌均匀,熄火。
  7. 将石膏粉浆倒入深锅中搅拌均匀,把作法6的豆浆拿高,一口气倒入深锅,盖上锅盖静置勿移动。时间大约30-40分钟即可。
  8. 將50g黃糖和50g水煮至糖溶解。
  9. 豆腐花用勺子舀起放碗中 淋上糖漿即可食用 。
